Coconut Gin Fizz
The gin and tonic is a perfect drink. This isn't a G&T. It's what happens when you take the logic of a G&T (spirit, fizz, botanical complexity) and run it through brewed coconut water instead of tonic.
Coco Loco Passion Spritz replaces the tonic water, and the difference is immediate. Instead of quinine bitterness, you get passionfruit aromatics. Instead of sugar-heavy mixers, you get brewed coconut water with ≤ 3.6g of sugar per can. The gin's botanicals have something more interesting to play with.

What You Need
Glass: Highball or tall tumbler
Ice: Cubed

Ingredients
- 200ml Coco Loco Passion Spritz, chilled
- 45ml dry gin (London dry or Australian botanical)
- 15ml fresh lime juice
- 2 thin slices of cucumber
- Sprig of fresh rosemary or thyme (optional)
Method
- Drop the cucumber slices into a tall glass and press once with the back of a spoon. You want the fragrance, not cucumber soup.
- Add the gin and lime juice. Stir briefly to combine.
- Fill the glass with ice.
- Pour the Coco Loco Passion Spritz gently over the ice.
- Tuck in the herb sprig if using. One gentle stir from the bottom.
Tasting Notes
The gin's botanicals lock into the passionfruit's aromatics in a way tonic water simply can't replicate. Where tonic adds bitterness, the coconut water base gives the mid-palate a clean, mineral quality that lets the gin breathe. Cucumber cools the finish. The lime keeps everything sharp and prevents the passionfruit from drifting into sweetness. It's simultaneously simpler and more interesting than a G&T.
When to Make It
Friday evening. The drink that marks the shift from the week to the weekend without requiring a whole bar cart.
Without the Spirit
Skip the gin entirely. Coco Loco Passion Spritz with muddled cucumber and lime over ice is a drink that doesn't apologise for having no spirit in it. One standard drink, and it tastes like a proper serve.
